Roman is the founder and heart of Soybird. With over ten years of experience as a plant-based chef and educator, he launched Kurkuma - Germany’s first vegan cooking school - in Hamburg in 2015. In 2023, he brought his next vision to life in Athens: a space that feels like home, where cooking is free from pressure and full of joy. Roman’s philosophy? No rules, no stress - just real food, real people, and real connection.

Alexandra Sarigianni – Vegan Head Chef
With more than 15 years of experience in plant-based cooking, Alexandra brings depth and soul to every Soybird class. She leads with calm confidence, offering guests a taste of traditional Greek flavors reimagined in a mindful, modern way. Beyond the kitchen, she guides powerful 9D Breathwork sessions in Athens, helping people find presence and peace.

Dimitra Chatziioannou – Vegan Chef
First to arrive in the morning (and always with great coffee), Dimitra is the calm heart of the kitchen. She’s behind many of Soybird’s most-loved vegan desserts and pastries. Her passion for baking is matched only by her love of nature and travel—especially to Scandinavia, where she draws inspiration from minimalist living and classic sweets.

Mirka Vlachou – Vegan Chef
Mirka brings creative energy and holistic insight to Soybird. With a background in plant-based nutrition, performance, and movement, she connects food with body and mind. A trained actor and dancer, she’s lived and worked across Europe—and now she’s lighting up our kitchen with rhythm, balance, and a lot of heart.

Konstantinos Dimoulas – Guest Vegan Chef
Founder of beets.me in Athens, Konstantinos is a creative force in the vegan culinary scene. As a guest chef and collaborator, he brings precision, storytelling, and a deep love of seasonal, sustainable cuisine to our classes. His cooking is a feast for all senses—clean, thoughtful, and always beautiful.
