Soybird was founded in 2023 in Athens – with the vision of creating a space where people from all over the world could come together through food.

From the very beginning, we wanted Soybird to feel like more than just a cooking school.
That’s why we welcome every guest into our Home Living Kitchen – a space that feels warm, personal, and alive. Like cooking at a friend’s home, but with a little more olive oil.

Meet the Founder – Roman Witt
Hi, I’m Roman – founder of Soybird and your host in the kitchen.
I’ve been working as a plant-based chef and cooking teacher for over a decade. Before opening Soybird in Athens, I ran one of Germany’s first vegan cooking schools in Hamburg, where we still host regular classes and workshops.

Soybird is my dream of bringing people together through food – without pressure, without pretension, and always with joy.
​
In our classes, we focus on traditional recipes, high-quality ingredients, and a personal, hands-on experience that makes you feel at home.

Alexandra Sarigianni – Vegan Head Chef
Alexandra is a plant-based chef with over 15 years of experience. As Head Chef at Soybird, she leads our cooking classes with calm, clarity, and passion.
​
She has worked across Europe in vegan kitchens and brings a deep love for traditional flavors and conscious cooking.
​
Beyond the kitchen, Alexandra also guides 9D Breathwork workshops in Athens – helping people reconnect with themselves through breath and presence.

Dimitra Chatziioannou – Vegan Chef
Dimitra is the first to open the kitchen – a true morning person who brings calm energy and good coffee to our daytime classes.
​
She’s especially passionate about vegan baking. From fluffy babkas to sweet Mediterranean treats, many of Soybird’s signature desserts are born in her oven.
When she’s not in the kitchen, you’ll find her exploring the north. Dimitra has a deep love for Scandinavia – not just for the cool, fresh air, but also for the pastries.

Mirka Vlachou – Vegan Chef
Mirka has lived vegan for several years and specializes in balanced plant-based nutrition. With a wealth of experience in clean, conscious eating, she brings a holistic approach to meal planning and wellness.

When she’s not in the kitchen, Mirka shines on stage in Athens—as an actress, singer, and dancer. Trained at the London Studio Centre (graduated 2017), she has performed in contemporary dance, musical theater, ballet, and choreography across Europe and Australia. Her creative energy and passion for health, expression, and authenticity make her a vibrant part of the Soybird team.

Konstantinos Dimoulas – Vegan Chef
Konstantinos is the founder of beets.me, a plant-based culinary studio and concept kitchen in Athens. Known for his creativity, precision, and deep respect for seasonal ingredients, he has become a leading voice in Greece’s modern vegan food scene.

At Soybird, Konstantinos supports us as a creative partner and guest chef. His style is minimal, rooted in Greek tradition, and always surprising in flavor and presentation.
​
Beyond the kitchen, Konstantinos is passionate about food education, sustainability, and community. Through beets.me, he hosts private dining events, workshops, and pop-ups – always with a strong visual and emotional signature.

Working with Konstantinos means working with someone who believes that good food tells a story – and brings people together around the table.

Before Soybird opened its doors in Athens, we started with a vision back in Germany.
In 2015, I founded the Kurkuma Kochschule in Hamburg – Germany’s first fully plant-based cooking school. Since then, Kurkuma has become a home for thousands of guests, inspiring people to cook creatively and consciously.
​
It’s still active today, offering regular vegan cooking classes, workshops and events.
