About the Class
Roll up your sleeves and discover the art of sushi — modern, sustainable and made entirely from plants. A small, intimate group in the heart of Athens, with a local host guiding you step by step. Because we think that's simply the more delicious way forward.
Sushi is about precision, patience and surprise. In this class you learn to cook perfect sushi rice from scratch — the foundation everything else rests on. Then you roll Maki, shape Nigiri by hand, fold Temaki cones and build California Rolls, using plant-based interpretations of the classic fillings: Tomato Tuna, Eggplant Eel and Carrot Salmon — each one a small revelation. Working in small teams, each group takes the lead on 2–3 elements depending on complexity. We make it together, plate it together, and eat it all at the end.
No experience needed. Our hosts guide you through every technique — rice seasoning, rolling, shaping, slicing. All levels welcome.


SIGNATURE DISH
Tomato Tuna Nigiri
The dish that surprises everyone. A ripe tomato, marinated in nori, soy and sesame, develops the deep umami and silky texture of raw tuna. Draped over hand-shaped sushi rice and finished with a dot of wasabi mayo — it looks like the real thing, tastes like something entirely new. The moment guests bite into it is always the best moment of the class.
